CAJUN NACHO SAUCE

Kinda like getting nachos from the 7-Eleven while on a road trip. It’s simple one, great for beginners—enjoy!

STUFF YOU NEED

½ cup + 2 TBS raw cashews

¾ cup water

2 TBS nutritional yeast 

¼ tsp salt

¾ tsp Cajun seasoning 

2 tsp Tabasco sauce (or other hot sauce) 

1 TBS fresh squeezed lemon juice 

Pinch of cayenne pepper

Suggested topping: pickled jalapenos

WHAT TO DO

  1. Soak cashews. Pour ¾ cup of boiling water over them and let them sit (covered) for 30 minutes.

  2. After the soak is complete, add remaining ingredients and blend for 2 minutes. It may seem like a long time, but this is the key to a smooth, creamy sauce. And it heats things up in the process so your nacho sauce will be warm and ready to serve!

  3. Enjoy! I love this sauce over potatoes, veggies, beans, and chips. Top with pickled jalapenos for an authentic road trip experience.

Note:  You’ll want to store in the fridge--but just be aware that over time, it will get thicker. If needed, just add a bit of hot water and re-blend for best consistency.
