Chard & Sweet Potato COCONUT STEW

I made this stew based on a recipe from “The First Mess.” The final product was a an fun combo of sweet, savory, and tangy.

Instead of re-writing and posting the recipe with my changes, I’m just going to send you straight to Laura’s original recipe! You can find it here. Why? Because that’s how she gets paid (page visits)!

So, when I made this recipe for myself, I made a few changes. It’s always fun to play around with recipes to make them your own! It can also make you a better chef! Don’t be afraid to tweak things. :)

My changes (for inspiration):

  • Used rainbow chard instead of kale (because I love chard)

  • Used white and purple sweet potatoes instead of orange (because YAY why not!)

  • Used 3 whole dried chiles instead of flakes (because it’s what I had)

  • Skipped the coriander and nigella seeds (I didn’t have those in my pantry)

  • Added about 1.5 cups of extra veggie stock, to make it soupier
